Pecans are perfect as a topping or ingredient in salads, vegetables, yogurt, oatmeal, sauces, breads and, of course, every kind of dessert. Store pecans in the freezer and have them on hand year-round.

Tarragon Chicken Salad

Tarragon Chicken Salad

Ingredients:

5 whole chicken breasts, cooked 1/2 cup celery, chopped 1 cup seedless grapes, quartered 1/2 cup mayonnaise 1/2 cup sour cream 2 tablespoon fresh tarragon, chopped 1/2 cup U.S. pecans, chopped and toasted Salt and pepper Mini croissants and leaf lettuce or crackers, for serving

Directions

Cube the cooked chicken. Combine all ingredients (except bread or crackers). Season to taste with salt and pepper. Chill. Split croissants with a bread knife; do not cut all the way through. Place a piece of leaf lettuce and a small scoop of chicken salad in each. Serve whole or cut in half as appetizers. Chicken salad can be served as a spread for crackers as well.
